Gingery Spinach with Lemon & Bacon
It’s all about balance.
Serves 1
5 strips of bacon (I love Niman Ranch (no sugar) Applewood Smoked Uncured Bacon)
1 Tbsp fresh ginger, minced
salt & pepper
1 bunch spinach
1 Tbsp nutritional yeast
1/2 lemon, juiced
Get a cast iron skillet nice and hot (medium flame). Add bacon strips to the pan. Cook until crispy (about 10 minutes). Set bacon aside, keeping rendered bacon fat to cook the spinach.
Add fresh ginger to the same hot skillet. Cook for 2 minutes and add spinach. Using tongs, toss spinach until it starts to wilt. Sprinkle with salt and pepper.
Once spinach is completely wilted (5 minutes or so) sprinkle in nutritional yeast and lemon juice. Give it a good toss and serve with a side of bacon for an easy, energizing breakfast.
Here we have another one-pan dish where we don’t waste a drop. I’ll admit, I was skeptical about adding bacon to the my diet. But, according to my nutritionist, high quality bacon (with no added sugar) is a good source of protein, vitamins, and minerals. When you pair it with a side of greens, it’s a balanced meal.
The bacon grease adds a ton of flavor to the spinach. Plus, we don’t have to use any extra oil in the process. I’ve become a fan of Niman Ranch bacon because the bacon itself actually tastes lean, instead of fatty like your standard generic brand bacon. I also trust Niman Ranch because their animals are raised by small, independent family farmers with sustainable and humane practices.
